The first inhabitants of the islands are thought to be the Arawak and Carib. It seems that the food was simple, prepared to take enough fish, fruits and vegetables. Europeans brought cattle, sheep and pigs to the islands, and the cooking methods of the Spanish, English, French, Portuguese and Dutch merged with the island traditions. The result has been many interesting dishes.

This Caribbean Stuffed Turkey Burger recipe is easy to prepare, yet makes an impressive display at any summer party! Sweet and savory spices combined with tropical fruits and other ingredients create a delightful flavor that is both delicious and refreshing. Griff’s Caribbean Grilled Turkey Burgers

Ingredients:

1.35 lbs

1 egg, beaten

1 can (8 oz.) crushed pineapple, drained

3 tbsp. Green onions, finely chopped

4 round tsp. dried parsley flakes

1 tbsp. McCormick® Caribbean Jerk Seasoning

Tips:

In a mixing bowl, mix well, by hand, the meat and the rest

ingredients, and make seven small patties (or make small, but big burgers if you want). Coat the grill with a little oil or non-stick PAM®. Grill burgers. IMPORTANT: Use canned, crushed pineapple in this recipe, NOT fresh! I tried a new one the other time and the burgers fell apart and made a big mess! Serve these burgers on hamburger buns with the lettuce and mango salsa recipe below.

Griff’s Mango Salsa

Ingredients:

2/3 cup chopped mango

2 tbsp. freshly squeezed lime juice

2 tbsp. freshly squeezed orange juice

4 round tsp. Jalapeno peppers (remove most of the seeds and membrane), finely chopped.

4 round tsp. finely chopped red onion.

2 round tsp. finely chopped red bell pepper.

2 round tsp. finely chopped green bell pepper.

1 tsp. dried parsley flakes

1/2 tsp. Lawry’s® pepper (or black pepper)

Tips:

Mix all the ingredients and refrigerate for an hour or more beforehand

to serve. This salsa is perfect for the Caribbean turkey above

burgers and it’s great on grilled fish and chicken too!
